red pepper relish (a crock pot recipe!)


You will need:
• 2 large red bell peppers, cut into thin strips
• 1 small sweet onion, thinly sliced
• 3 tablespoons cider vinegar
• 2 tablespoons brown sugar
• 1 tablespoon vegetable oil
• 1 tablespoon honey
• 1/4 teaspoon each: salt, dried thyme leaves, red pepper flakes, black pepper


1. Combine all ingredients in slow cooker, mix well.

2. Cover and cook on LOW 4 hours.

Serve relish on toasted baguette slices as an appetizer; serve with grilled lamb, pork, chicken, or beef; or use as a topper for burgers or sausages.
