You will need: 2 mangoes 1 lime 1/2 cup diced red onion 3 tablespoons chopped mint 1 jalapeņo(seeds removed), minced 1/4 teaspoon chili powder 1/8 teaspoon salt 1. Remove skin from mangoes and dice the fleshy part. 2. Grate 1/2 teaspoon of the zest from the lime and squeeze 2 tablespoons of juice. 3. Combine mango, lime zest and juice, onion, mint, jalapeņo, cayenne and salt. 4. Taste and season with additional salt and cayenne if necessary. Makes about 2 1/2 cups.
