mango salsa


You will need:
• 2 mangoes
• 1 lime
• 1/2 cup diced red onion
• 3 tablespoons chopped mint
• 1 jalapeņo(seeds removed), minced
• 1/4 teaspoon chili powder
• 1/8 teaspoon salt

1. Remove skin from mangoes and dice the fleshy part.

2. Grate 1/2 teaspoon of the zest from the lime and squeeze 2 tablespoons of juice.

3. Combine mango, lime zest and juice, onion, mint, jalapeņo, cayenne and salt.

4. Taste and season with additional salt and cayenne if necessary. Makes about 2 1/2 cups.

Great with fish or chicken.
