You will need: 2 tablespoons butter 1/2 cup finely chopped onion 1/4 cup finely chopped bell pepper (green,red,yellow,or orange) 1 tablespoon flour 1 1/2 teaspoons brown sugar 1/4 teaspoon dried marjoram 1/2 teaspoon dried thyme or 1 teaspoon fresh thyme salt and pepper to taste 1 14.5 oz can diced tomatoes 1 pound fresh fish fillets (cod, grouper, or halibut) 1. preheat oven to 400 F. grease (with pam or butter) a shallow baking pan. 2. in a medium skillet melt the butter over medium heat. add the onion and pepper and saute until onion is translucent, about 4-5 minutes. stir in the flour, brown sugar, marjoram, thyme, salt and pepper, and tomatoes. bring to a boil and allow sauce to thicken, about 3-4 minutes. 3. place fish in baking dish and pour sauce on top. bake 15-18 minutes or until fish is done. note that a thicker fillet may require 20-25 minutes baking time. serves 4 |
